Ingredients
  

Vegetables
  • 4 cups yellow squash, sliced about 3 medium squash
  • 1 cup onion, chopped yellow or white onion
Dairy
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 cup shredded cheddar cheese or your favorite cheese
Seasonings
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
Topping
  • 1 cup bread crumbs for topping
  • 2 tablespoons butter, melted

Method
 

Prepare the Squash
  1. Preheat the oven to 350°F (175°C). In a skillet over medium heat, sauté the sliced yellow squash and chopped onion until tender, about 5-7 minutes.
Mix Ingredients
  1. In a mixing bowl, combine the sautéed squash and onion with sour cream, shredded cheddar cheese, salt, pepper, and garlic powder. Mix well.
Assemble the Casserole
  1. Transfer the mixture to a greased 9x13 inch baking dish. In a separate bowl, mix the bread crumbs with melted butter and sprinkle over the top of the casserole.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes before serving. Enjoy your yellow squash casserole!
