Ingredients
  

For the Tortas
  • 4 pieces bolillo or telera bread cut in half
  • 1 cup refried beans homemade or canned
  • 1 cup shredded cooked chicken or any protein of choice
  • 1 cup sliced avocado
  • 1 cup sliced tomatoes
  • 1 cup shredded lettuce
  • 1 cup sour cream for topping
  • 1 tablespoon hot sauce optional

Method
 

Prepare the Ingredients
  1. Slice the bolillo or telera bread in half and set aside.
  2. Prepare the refried beans by heating them in a small pot until warm.
  3. Shred the cooked chicken if not already done.
  4. Slice the avocado and tomatoes, and wash the lettuce.
Assemble the Tortas
  1. Spread a generous layer of refried beans on the bottom half of each bread.
  2. Top with shredded chicken, avocado slices, tomatoes, and lettuce.
  3. Add a dollop of sour cream and drizzle with hot sauce if desired.
  4. Cover with the top half of the bread.
Grill the Tortas
  1. Heat a griddle over medium heat and lightly grease it.
  2. Place the assembled tortas on the griddle and press down gently with a spatula.
  3. Cook for about 3-4 minutes on each side until the bread is golden and crispy.
Serve
  1. Remove the tortas from the griddle, cut in half if desired, and serve immediately.
