Prepare the Ingredients
- Slice the bolillo or telera bread in half and set aside.
- Prepare the refried beans by heating them in a small pot until warm.
- Shred the cooked chicken if not already done.
- Slice the avocado and tomatoes, and wash the lettuce.
Assemble the Tortas
- Spread a generous layer of refried beans on the bottom half of each bread.
- Top with shredded chicken, avocado slices, tomatoes, and lettuce.
- Add a dollop of sour cream and drizzle with hot sauce if desired.
- Cover with the top half of the bread.
Grill the Tortas
- Heat a griddle over medium heat and lightly grease it.
- Place the assembled tortas on the griddle and press down gently with a spatula.
- Cook for about 3-4 minutes on each side until the bread is golden and crispy.
Serve
- Remove the tortas from the griddle, cut in half if desired, and serve immediately.
