Ingredients
  

Pie Crust
  • 1 each pre-made pie crust or homemade
Filling
  • 4 cups fresh tomatoes sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh oregano chopped
  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Pie Crust
  1. Preheat the oven to 375°F (190°C). Place the pre-made pie crust in the pie dish and set aside.
Make the Filling
  1. In a mixing bowl, combine the sliced tomatoes, mozzarella cheese, cheddar cheese, basil, oregano, salt, and pepper.
  2. In another bowl, whisk together the eggs and heavy cream until well combined.
  3. Pour the egg mixture over the tomato mixture and stir to combine.
Assemble and Bake
  1. Pour the filling into the prepared pie crust, spreading it evenly.
  2. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
  3. Allow to cool for 10 minutes before slicing and serving.
