Preparation
  1. Gather all ingredients: 2 cups of all-purpose flour, 1/3 cup of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, 6 tablespoons of cold unsalted butter, 1 cup of fresh strawberries, 1/2 cup of heavy cream, and 1 egg yolk.
  2. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the diced strawberries, then add the heavy cream and egg yolk, mixing until just combined.
  6. Turn the dough out onto a floured surface and gently knead it a few times before shaping it into a circle.
  7. Cut the dough into wedges and place them on a baking sheet lined with parchment paper.
  8. Brush the tops with milk before baking.
  9. Bake for 15-20 minutes or until golden brown.
