- Gather all ingredients: 2 cups of all-purpose flour, 1/3 cup of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, 6 tablespoons of cold unsalted butter, 1 cup of fresh strawberries, 1/2 cup of heavy cream, and 1 egg yolk.
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the diced strawberries, then add the heavy cream and egg yolk, mixing until just combined.
- Turn the dough out onto a floured surface and gently knead it a few times before shaping it into a circle.
- Cut the dough into wedges and place them on a baking sheet lined with parchment paper.
- Brush the tops with milk before baking.
- Bake for 15-20 minutes or until golden brown.
