Ingredients
  

Salmon Mixture
  • 1 lb fresh salmon fillet cooked and flaked
  • 1 cup bread crumbs preferably panko
  • 1 large egg beaten
  • 1 tbsp fresh parsley chopped
  • 1 tbsp green onion chopped
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice freshly squeezed
  • 1 tsp salt
  • 1 tsp black pepper
For Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Salmon Mixture
  1. In a mixing bowl, combine the flaked salmon, bread crumbs, beaten egg, parsley, green onion, Dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.
Form the Croquettes
  1. Shape the salmon mixture into small patties or croquettes, about 2 inches in diameter.
Fry the Croquettes
  1. Heat the vegetable oil in a frying pan over medium heat. Once hot, carefully add the croquettes in batches, frying for about 3-4 minutes on each side or until golden brown.
Serve
  1. Remove the croquettes from the pan and place them on a paper towel to drain excess oil. Serve warm with your favorite dipping sauce.

Notes

These croquettes can be made ahead of time and frozen. Just fry them straight from the freezer, adding a couple of extra minutes to the cooking time.
