Ingredients
  

Eggs
  • 8 large eggs fresh
Dairy
  • 1/4 cup milk optional for fluffiness
  • 1/2 cup cheddar cheese shredded
Vegetables
  • 1 cup bell pepper diced
  • 1 cup spinach fresh
  • 1/2 cup onion diced
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon butter for cooking

Method
 

Prepare the Ingredients
  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Chop the vegetables and set aside.
Cook the Omelette
  1. Heat the butter in a non-stick skillet over medium heat until melted.
  2. Add the diced onions and bell peppers to the skillet, sautéing until softened, about 3-4 minutes.
  3. Add the spinach and cook until wilted.
  4. Pour the egg mixture over the sautéed vegetables, tilting the pan to spread it evenly.
  5. Cook for about 3-4 minutes, or until the edges start to set.
  6. Sprinkle the cheese on one half of the omelette, then fold the other half over the cheese.
  7. Cook for another minute until the cheese is melted and the omelette is cooked through.
  8. Slide the omelette onto a plate and cut into wedges to serve.
