Topping
  • 4 tablespoons unsalted butter melted
  • 1 cup light brown sugar packed
  • 1 can pineapple rings well-drained
  • 4 maraschino cherries for garnish
Cake
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder fresh
  • 1 pinch salt
  • 1/2 cup granulated sugar adjust to taste
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract pure
  • 1/2 cup whole milk or buttermilk

Method
 

Preparation
  1. Gather all your ingredients including fresh pineapple, brown sugar, butter, eggs, and milk.
  2. Preheat your oven to 350°F.
Prepare the Topping
  1. In a small saucepan over medium heat, melt the butter until it bubbles gently.
  2. Stir in the brown sugar until fully combined and glossy.
  3. Pour the mixture into greased muffin tins.
Assemble the Cakes
  1. Add the pineapple rings on top of the butter-sugar mixture in the muffin tins.
  2. Prepare the cake batter by mixing flour, baking powder, salt, sugar, eggs, vanilla extract, and milk.
  3. Pour the batter over the pineapple in the muffin tins.
Bake
  1. Bake in the preheated oven for about 25 minutes or until a toothpick comes out clean.
  2. Let cool slightly before inverting onto a serving platter.
