Ingredients
  

Rice Mixture
  • 1 cup long-grain white rice rinsed
  • 4 cups water for soaking
Final Mixture
  • 2 cups milk can use almond or coconut milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups ice for serving

Method
 

Prepare the Rice
  1. In a large bowl, combine the rinsed rice, water, and cinnamon stick. Let it soak for at least 4 hours or overnight.
Blend the Mixture
  1. After soaking, drain the rice and cinnamon stick. Place them in a blender with 2 cups of fresh water. Blend until smooth.
Strain the Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher, discarding the solids.
Combine Ingredients
  1. Add the milk, sugar, vanilla extract, and salt to the strained liquid. Stir well to combine.
Serve
  1. Serve over ice and enjoy your refreshing horchata!

Notes

Horchata can be stored in the refrigerator for up to 3 days. Shake well before serving as ingredients may settle.
