Ingredients
  

Rice Mixture
  • 1 cup long-grain white rice rinsed and drained
  • 4 cups water for soaking
Final Mixture
  • 2 cups milk can use almond or coconut milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup ice optional, for serving

Method
 

Prepare Rice
  1. In a large bowl, combine the rinsed rice, water, and cinnamon stick. Let it soak for at least 4 hours or overnight.
Blend
  1. After soaking, drain the rice and cinnamon stick. In a blender, combine the soaked rice with 2 cups of fresh water and blend until smooth.
Strain
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a pitcher, discarding the solids.
Mix
  1. Add the milk, sugar, vanilla extract, and salt to the strained liquid. Stir well until the sugar is dissolved.
Serve
  1. Serve chilled over ice if desired. Stir before serving.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as ingredients may settle.
