Ingredients
  

Chicken
  • 2 cups cooked chicken breast shredded or diced
Salad Greens
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 carrot shredded
Honey Mustard Dressing
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 pinch salt
  • 1 pinch black pepper
Toppings
  • 1 cup croutons optional
  • 1 4 ounces feta cheese crumbled, optional

Method
 

Prepare the Chicken
  1. Grill or bake the chicken breast until fully cooked, about 20 minutes. Let it cool and then shred or dice it.
Make the Dressing
  1. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and shredded carrot. Add the cooked chicken on top.
  2. Drizzle the honey mustard dressing over the salad and toss gently to combine.
  3. Top with croutons and feta cheese if desired.
