  • 2 cups cooked pinto beans Dried or canned
  • 1 medium onion Sauté until translucent
  • 2-3 cloves garlic Minced
  • 2 tablespoons olive oil or lard For cooking
  • 1 teaspoon ground cumin Adjust to taste
  • to taste kosher salt Add gradually
  • 1/2 cup vegetable or chicken broth Low-sodium preferred
  • 1 tablespoon lime juice Optional
  • 2 tablespoons fresh cilantro Chopped, optional

Method
 

Preparation
  1. Gather your ingredients: cooked pinto beans, onion, garlic, cumin, and olive oil.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and sauté for another minute until fragrant.
  4. Add your cooked pinto beans to the skillet. Mash the beans to your desired consistency.
  5. Sprinkle in ground cumin and salt to taste. Gradually add water, stirring continuously until creamy.
  6. Allow the mixture to simmer on low heat for about 10 minutes to meld flavors.
  7. Taste and adjust seasonings as needed. Serve warm as a side or inside tacos.
