Ingredients
  

Sugar Cookie Crust
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Frosting
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk adjust for consistency
Toppings
  • 1 cup strawberries sliced
  • 1 cup kiwi sliced
  • 1 cup blueberries
  • 1 cup banana sliced

Method
 

Prepare the Sugar Cookie Crust
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the cookie dough onto the prepared baking sheet in a round shape, about 1/2 inch thick.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
Make the Frosting
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar, mixing until well combined.
  3. Add the vanilla extract and milk, mixing until the frosting is smooth and spreadable.
Assemble the Fruit Pizza
  1. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  2. Arrange the sliced strawberries, kiwi, blueberries, and banana on top of the frosting in a decorative pattern.
  3. Slice into wedges and serve immediately or refrigerate until ready to serve.
