Ingredients
  

Pasta and Vegetables
  • 8 ounces fusilli pasta or any pasta of choice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup sweet corn cooked
  • 1 cup crab meat cooked and shredded
Dressing
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, sweet corn, and crab meat.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Garnish with fresh parsley and serve chilled.
