Ingredients

  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
Wet Ingredients
  • 1.25 cups milk whole or buttermilk
  • 1 large egg beaten
  • 3 tablespoons unsalted butter melted

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In another bowl, mix the milk, beaten egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
  1. Preheat a griddle or frying pan over medium heat and lightly grease it with butter or oil.
  2. Pour about 1/4 cup of batter for each pancake onto the griddle.
  3. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  4. Flip the pancakes and cook for another 1-2 minutes until golden brown.
Serve
