  • 3 large yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 garlic cloves, minced
  • 2 tsp dried thyme (or 2 sprigs fresh thyme)
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  5. Return the seared roast to the pot, nestling it among the onions. Cover with a lid.
  6. Reduce heat to low and simmer for 3-4 hours until the roast is fork-tender.
