- 2 lbs Beef Chuck Roast, well-marbled, cut into 1-inch chunks
- 2 cups Dry Red Wine (Burgundy or Pinot Noir)
- 3 large Carrots, peeled and cut into thick rounds
- 8 oz Cremini or Button Mushrooms, sliced
- 2 Yellow Onions, chopped
- 4 Garlic Cloves, minced
- 4 sprigs Fresh Thyme
- 2 Bay Leaves
- 3 cups Low-Sodium Beef Broth
- 4 oz Bacon or Lardons, diced
- 2 tbsp Butter
- 2 tbsp Olive Oil
Instructions
- In a large Dutch oven over medium heat, cook diced bacon until crispy. Remove and set aside.
- In the same pot, sear beef chunks in batches until browned on all sides. Remove from pot.
- Add chopped onions and minced garlic; sauté until onions are translucent (about 5 minutes).
- Pour in red wine to deglaze the pot, scraping up browned bits. Let simmer for 10 minutes.
- Stir in beef broth, thyme sprigs, bay leaves, and return beef and bacon to the pot.
- Bring to a gentle boil then reduce heat to low and cover. Simmer for at least 2 hours until beef is fork-tender.
