  • 2 lbs Beef Chuck Roast, well-marbled, cut into 1-inch chunks
  • 2 cups Dry Red Wine (Burgundy or Pinot Noir)
  • 3 large Carrots, peeled and cut into thick rounds
  • 8 oz Cremini or Button Mushrooms, sliced
  • 2 Yellow Onions, chopped
  • 4 Garlic Cloves, minced
  • 4 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 3 cups Low-Sodium Beef Broth
  • 4 oz Bacon or Lardons, diced
  • 2 tbsp Butter
  • 2 tbsp Olive Oil

Instructions

  1. In a large Dutch oven over medium heat, cook diced bacon until crispy. Remove and set aside.
  2. In the same pot, sear beef chunks in batches until browned on all sides. Remove from pot.
  3. Add chopped onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  4. Pour in red wine to deglaze the pot, scraping up browned bits. Let simmer for 10 minutes.
  5. Stir in beef broth, thyme sprigs, bay leaves, and return beef and bacon to the pot.
  6. Bring to a gentle boil then reduce heat to low and cover. Simmer for at least 2 hours until beef is fork-tender.
