  • 1 cup mascarpone cheese
  • 1 cup pumpkin puree (canned or homemade)
  • 24 ladyfingers
  • 1 cup brewed strong coffee (cooled)
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Brew strong coffee and let it cool slightly.
  2. In a mixing bowl, whisk together mascarpone cheese, pumpkin puree, sugar, cinnamon, nutmeg, and vanilla until smooth.
  3. Quickly dip each ladyfinger into the cooled coffee for about 1-2 seconds.
  4. In a trifle dish or individual cups, layer soaked ladyfingers followed by half of the pumpkin filling. Repeat with another layer of ladyfingers and finish with the remaining filling.
  5. Cover and refrigerate for at least 4 hours or overnight for best flavor.
  6. Before serving, dust with cinnamon or cocoa powder.
