  • 2 lbs Russet potatoes, peeled and chopped
  • 2 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 4 tbsp unsalted butter
  • ½ cup whole milk or heavy cream
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even chunks. Rinse the broccoli florets.
  2. Boil a large pot of salted water; add the potatoes and cook for 15-20 minutes until tender.
  3. In the last 5 minutes of cooking, add the broccoli florets.
  4. Drain both potatoes and broccoli, then return to the pot and mash until desired consistency.
  5. Stir in butter, milk or cream, cheddar cheese, salt, and pepper until creamy. Adjust seasoning as needed.
  6. Serve warm, garnished with extra cheese or herbs if desired.
