- 2 lbs Russet potatoes, peeled and chopped
- 2 cups fresh broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 4 tbsp unsalted butter
- ½ cup whole milk or heavy cream
- Salt and pepper to taste
Instructions
- Peel and chop the potatoes into even chunks. Rinse the broccoli florets.
- Boil a large pot of salted water; add the potatoes and cook for 15-20 minutes until tender.
- In the last 5 minutes of cooking, add the broccoli florets.
- Drain both potatoes and broccoli, then return to the pot and mash until desired consistency.
- Stir in butter, milk or cream, cheddar cheese, salt, and pepper until creamy. Adjust seasoning as needed.
- Serve warm, garnished with extra cheese or herbs if desired.
