- 1 cup salsa verde
- 1 cup long-grain rice
- 1 cup bell peppers (diced)
- 1 medium onion (chopped)
- 3 garlic cloves (minced)
- 2 cups low-sodium chicken broth
- ¼ cup fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 tbsp olive oil
Instructions

- Cover and simmer on low heat for about 20 minutes, checking occasionally until rice absorbs liquid and is tender.
