  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup long-grain rice
  • 1 cup bell peppers (diced)
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 2 cups low-sodium chicken broth
  • ¼ cup fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping the bell peppers and onion, and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5 minutes on each side until golden brown, then remove from the skillet.
  3. In the same skillet, sauté chopped onions and garlic until fragrant (about 2 minutes). Add diced bell peppers and cook for an additional minute.
  4. Return the seared chicken to the skillet along with rinsed rice. Pour in salsa verde and chicken broth; mix well.
  5. Cover and simmer on low heat for about 20 minutes, checking occasionally until rice absorbs liquid and is tender.
  6. Stir in lime juice and cilantro before serving hot.
