  • 4 large eggs
  • ½ cup unsalted butter (softened)
  • Zest of 5 calamansi

Instructions

  1. Gather all ingredients and measure out the fresh calamansi juice and zest.
  2. In a medium saucepan, whisk together the calamansi juice, sugar, and eggs until smooth.
  3. Heat over low heat while stirring continuously for about 10 minutes until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and stir in the softened butter until melted and fully combined.
  5. Strain through a fine-mesh sieve into a bowl to ensure smooth texture. Cover with plastic wrap pressed against the surface to prevent skin formation.
  6. Chill in the refrigerator for at least one hour before serving.
