  • 3 medium fresh beets (about 450g)
  • 1 cup diced cucumbers
  • 1 cup crumbled feta cheese (150g)
  • ¼ cup chopped fresh dill
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for about 45 minutes until tender.
  2. Allow the beets to cool slightly before peeling; skins should come off easily.
  3. While the beets cool, dice the cucumbers and crumble feta cheese.
  4. In a bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. In a large bowl, combine roasted beets, diced cucumbers, feta cheese, and dill. Drizzle with dressing and toss gently.
