  • 3 lbs brisket corned beef
  • 1 medium head green cabbage, chopped into wedges
  • 4 medium carrots, sliced into thick rounds
  • 2 medium sweet onions, quartered
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp whole peppercorns

Instructions

  1. Thoroughly wash and chop all vegetables: cabbage into wedges, carrots into rounds, and onions into quarters. Mince the garlic.
  2. Layer chopped onions at the bottom of the slow cooker. Add carrot rounds on top.
  3. Place corned beef brisket (fat side up) over the veggies.
  4. Pour beef broth until everything is just submerged; add bay leaves and peppercorns.
  5. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  6. In the last hour of cooking, add cabbage wedges on top to steam until tender.
