- 2–3 lbs beef chuck roast, diced
- 4 medium carrots, sliced into thick rounds
- 4 medium Yukon Gold or red potatoes, chopped into chunks
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp tomato paste
- 1 tsp fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp Worcestershire sauce
Instructions
- Prepare your ingredients by washing and chopping the vegetables.
- In a skillet over medium-high heat, sear the diced beef until browned on all sides.
- Transfer the seared beef and vegetables into the slow cooker. Add garlic, broth, Worcestershire sauce, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Before serving, remove the bay leaf and adjust seasoning if necessary. Serve hot with crusty bread or over mashed potatoes.
