  • 23 lbs beef chuck roast, diced
  • 4 medium carrots, sliced into thick rounds
  • 4 medium Yukon Gold or red potatoes, chopped into chunks
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables.
  2. In a skillet over medium-high heat, sear the diced beef until browned on all sides.
  3. Transfer the seared beef and vegetables into the slow cooker. Add garlic, broth, Worcestershire sauce, tomato paste, thyme, bay leaf, salt, and pepper. Stir well.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  5. Before serving, remove the bay leaf and adjust seasoning if necessary. Serve hot with crusty bread or over mashed potatoes.
