  • 34 lb beef chuck roast
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Pasta or polenta for serving

Instructions

  1. Sear the beef chuck roast in olive oil over medium-high heat until golden brown on all sides. Season with salt and pepper.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent (about 5 minutes).
  3. Transfer seared beef to the slow cooker. Add crushed tomatoes, beef broth, red wine, and sprinkle herbs over the top.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. After cooking, shred the beef with two forks and return it to the sauce. Adjust seasoning as needed.
  6. Serve hot over pasta or creamy polenta garnished with Parmesan cheese.
