Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour and butter until crumbly. Gradually add cold water until dough forms. Roll out and fit into a pie dish.
- Blind bake the crust with parchment paper and weights for 15 minutes or until lightly golden. Remove weights and let cool.
- Whisk together lemon juice, sugar, eggs, and butter in another bowl until smooth. Pour filling into cooled crust.
- Bake for 25-30 minutes until the center is slightly jiggly but set.
- While cooling, whip heavy cream until soft peaks form; add sugar to taste.
- Once completely cooled, top the pie with whipped cream and garnish with lemon zest or slices.
