Ingredients

  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup fresh lemon juice (about 23 lemons)
  • ¼ cup heavy cream
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour and butter until crumbly. Gradually add cold water until dough forms. Roll out and fit into a pie dish.
  3. Blind bake the crust with parchment paper and weights for 15 minutes or until lightly golden. Remove weights and let cool.
  4. Whisk together lemon juice, sugar, eggs, and butter in another bowl until smooth. Pour filling into cooled crust.
  5. Bake for 25-30 minutes until the center is slightly jiggly but set.
  6. While cooling, whip heavy cream until soft peaks form; add sugar to taste.
  7. Once completely cooled, top the pie with whipped cream and garnish with lemon zest or slices.
