  • 1 whole turkey (1214 lbs), fresh or thawed
  • 1/2 cup kosher salt
  • 1/4 cup brown sugar
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp black pepper
  • 2 tbsp poultry seasoning
  • 1/4 cup olive oil or melted butter

Instructions

  1. Pat the turkey dry with paper towels to ensure seasoning adheres well.
  2. In a bowl, mix kosher salt, brown sugar, garlic powder, onion powder, black pepper, and poultry seasoning until well blended.
  3. Rub the dry brine mixture generously all over the turkey, including inside the cavity.
  4. Place the seasoned turkey on a rack in a roasting pan and refrigerate uncovered for 24 to 48 hours.
  5. Preheat the oven to 325°F (160°C).
  6. Roast the turkey for about two hours or until it reaches an internal temperature of 165°F. Baste with olive oil or melted butter every 30 minutes for crispy skin.
