- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 4 cups beef broth
- 2 tsp Italian seasoning
- 8 oz broken lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- Brown the ground beef in a skillet over medium heat until no longer pink; drain excess fat.
- Sauté chopped onion and minced garlic in the same skillet until fragrant.
- In a crockpot, combine cooked beef, sautéed onion and garlic, canned tomatoes, beef broth, Italian seasoning, and broken lasagna noodles. Stir well.
- Cook on low for 4-6 hours or until noodles are tender.
- In the last 30 minutes of cooking, stir in ricotta cheese and half of the mozzarella until melted.
