- 9 lasagna noodles (no-boil or regular)
- 4 cups fresh spinach
- 15 oz ricotta cheese (whole milk)
- 2 cups shredded mozzarella cheese (part-skim)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F (190°C).
- Sauté spinach in a pan over medium heat for 3-4 minutes until wilted; set aside.
- In a bowl, mix ricotta, sautéed spinach, eggs, garlic powder, Italian seasoning, salt, and pepper.
- Spread marinara sauce in a baking dish and layer with noodles, ricotta mixture, and mozzarella cheese until all ingredients are used.
- Cover with foil and bake for 25 minutes; uncover and add remaining mozzarella cheese. Bake for an additional 15 minutes until bubbly and golden.
- Let rest for 10 minutes before slicing.
