Description

Shamrock Lasagna combines rich ricotta, fresh spinach, and layers of gooey cheese for a festive twist on a classic dish, making it perfect for St. Patrick’s Day or any gathering.


Ingredients

  • 9 lasagna noodles (no-boil or regular)
  • 4 cups fresh spinach
  • 15 oz ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese (part-skim)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté spinach in a pan over medium heat for 3-4 minutes until wilted; set aside.
  3. In a bowl, mix ricotta, sautéed spinach, eggs, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread marinara sauce in a baking dish and layer with noodles, ricotta mixture, and mozzarella cheese until all ingredients are used.
  5. Cover with foil and bake for 25 minutes; uncover and add remaining mozzarella cheese. Bake for an additional 15 minutes until bubbly and golden.
  6. Let rest for 10 minutes before slicing.
