  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • ½ tsp garlic powder
  • ¼ cup pine nuts (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the turkey breast between plastic wrap and pound it to about ½ inch thickness.
  3. Sauté spinach in a skillet over medium heat with garlic powder until wilted.
  4. In a bowl, combine breadcrumbs, cream cheese, sautéed spinach, herbs, pine nuts (if using), salt, and pepper.
  5. Spread the stuffing mixture evenly over the turkey breast and roll it tightly.
  6. Secure the roulade with kitchen twine or toothpicks and season the outside with salt and pepper.
  7. Bake for 45-50 minutes or until internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
