  • 3 lbs corned beef brisket
  • 1 medium green cabbage, cut into wedges
  • 4 medium carrots, sliced into thick rounds
  • 4 medium Yukon Gold potatoes, quartered
  • 2 sweet onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 spice packet (includes peppercorns, mustard seeds)
  • 2 bay leaves
  • 1 tsp black peppercorns, freshly cracked
  • 4 garlic cloves, crushed

Instructions

  1. Prepare your ingredients by washing vegetables and slicing carrots and cabbage.
  2. Layer sliced onions at the bottom of a slow cooker. Place the corned beef brisket on top, fat side up.
  3. Add carrots, potatoes, and cabbage wedges on top of the brisket.
  4. Pour beef broth over the ingredients until just covered; sprinkle in spice packet contents along with bay leaves and peppercorns.
  5. Cover and cook on low heat for approximately 8 hours until fork-tender.
  6. Remove corned beef from the pot to rest before slicing against the grain.
