- 4 cups vegetable broth
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (to garnish)
Instructions
- In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper until combined.
- Roll the mixture into 1-inch meatballs and set aside.
- In an Instant Pot or pot over medium heat, sauté diced onions, carrots, and celery for about 5 minutes until softened.
- Pour in vegetable broth and add the meatballs gently. Bring to a boil.
- For the Instant Pot: Seal lid and cook on high pressure for 10 minutes. For stovetop: Simmer uncovered for 25-30 minutes until meatballs are cooked through.
