  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1/4 cup freshly grated Parmesan cheese
  • 1 large egg
  • 4 cups vegetable broth
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (to garnish)

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper until combined.
  2. Roll the mixture into 1-inch meatballs and set aside.
  3. In an Instant Pot or pot over medium heat, sauté diced onions, carrots, and celery for about 5 minutes until softened.
  4. Pour in vegetable broth and add the meatballs gently. Bring to a boil.
  5. For the Instant Pot: Seal lid and cook on high pressure for 10 minutes. For stovetop: Simmer uncovered for 25-30 minutes until meatballs are cooked through.
  6. Stir in fresh parsley before serving. Ladle into bowls and enjoy!
