  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 1 can (14.5 oz) whole tomatoes
  • 4 cups chicken or beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, salt, and pepper until just combined. Shape into golf ball-sized meatballs.
  2. Heat olive oil in an Instant Pot or large pot over medium heat. Sauté chopped onions, carrots, and celery for about 5 minutes until softened.
  3. Add broth and crushed tomatoes to the pot along with oregano and basil. Bring to a gentle boil.
  4. Carefully drop meatballs into the simmering broth. For Instant Pot: cook on high pressure for 8 minutes; for stovetop: simmer for about 20 minutes until cooked through.
  5. Adjust seasonings as needed before serving hot.
