Ingredients

  • 2 lbs russet potatoes, thinly sliced
  • 2 large yellow onions, thinly sliced
  • 1 cup Gruyère cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt the butter over medium heat. Add sliced onions and sauté until caramelized (about 15 minutes).
  3. In a large bowl, combine sautéed onions with heavy cream, thyme, salt, and pepper.
  4. In a greased baking dish, layer half of the potato slices followed by half of the onion mixture and half of the cheese. Repeat the layers.
  5. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake an additional 20 minutes until golden brown.
