- 3–4 boneless, skinless chicken breasts
- 4 cups fresh baby spinach
- 8 oz cremini or button mushrooms, sliced
- 2 cups low-sodium chicken broth
- 4 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tsp cornstarch mixed with 2 tbsp water
- 2 cups cooked white or brown rice
Instructions
- Prep your ingredients by chopping the mushrooms and mincing the garlic.
- Place the chicken breasts at the bottom of the crockpot.
- Pour in the chicken broth and soy sauce.
- Add the sliced mushrooms and fresh spinach on top of the chicken.
- Sprinkle minced garlic over everything and season with salt and pepper.
- Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours.
- About 30 minutes before serving, stir in the cornstarch slurry to thicken the sauce.
