- 3 boneless, skinless chicken breasts
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/4 cup thinly sliced red onion
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tbsp fresh dill, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper, then grill for about 6-7 minutes per side until cooked through.
- In a bowl, mix Greek yogurt, minced garlic, chopped dill, lemon juice, salt, and pepper to create the tzatziki sauce.
- While the chicken cooks, chop the cucumber and cherry tomatoes and slice the red onion thinly.
- Once grilled chicken has cooled slightly, cut it into strips. In a large bowl, combine chicken strips, chopped veggies, and tzatziki sauce. Toss gently to combine.
- Serve in bowls or on plates; garnish with extra dill if desired.
