Description

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper, then grill for about 6-7 minutes per side until cooked through.
  2. In a bowl, mix Greek yogurt, minced garlic, chopped dill, lemon juice, salt, and pepper to create the tzatziki sauce.
  3. While the chicken cooks, chop the cucumber and cherry tomatoes and slice the red onion thinly.
  4. Once grilled chicken has cooled slightly, cut it into strips. In a large bowl, combine chicken strips, chopped veggies, and tzatziki sauce. Toss gently to combine.
  5. Serve in bowls or on plates; garnish with extra dill if desired.
