- 2 ripe heirloom tomatoes (about 300g), diced
- 2 ripe peaches (about 300g), sliced
- 1 small red onion (about 50g), thinly sliced
- 1 cup fresh basil leaves, torn
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
- ½ cup crumbled feta cheese (optional)
Instructions
- Wash and dry the tomatoes and peaches. Dice the tomatoes and slice the peaches carefully.
- Thinly slice the red onion; if too strong, soak in cold water for 10 minutes.
- In a large bowl, combine the diced tomatoes, sliced peaches, red onion, and torn basil leaves. Gently toss.
- Drizzle olive oil and balsamic vinegar over the mixture; season with salt and pepper. Toss gently until well coated.
- If using feta cheese, sprinkle on top before serving.
