Ingredients

  • 2 ripe heirloom tomatoes (about 300g), diced
  • 2 ripe peaches (about 300g), sliced
  • 1 small red onion (about 50g), thinly sliced
  • 1 cup fresh basil leaves, torn
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. Wash and dry the tomatoes and peaches. Dice the tomatoes and slice the peaches carefully.
  2. Thinly slice the red onion; if too strong, soak in cold water for 10 minutes.
  3. In a large bowl, combine the diced tomatoes, sliced peaches, red onion, and torn basil leaves. Gently toss.
  4. Drizzle olive oil and balsamic vinegar over the mixture; season with salt and pepper. Toss gently until well coated.
  5. If using feta cheese, sprinkle on top before serving.
