- 2 cups rotini pasta (uncooked)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1 cup bell peppers (diced, mixed colors)
- 1/2 cup red onion (thinly sliced)
- 1/2 cup feta cheese (crumbled)
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and thinly slice the red onion.
- In a large bowl, combine cooled pasta with the chopped veggies and crumbled feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the pasta mixture and toss gently until everything is evenly coated. Chill for at least 30 minutes before serving.
