Ingredients

  • 2 cups rotini pasta (uncooked)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1 cup bell peppers (diced, mixed colors)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and thinly slice the red onion.
  3. In a large bowl, combine cooled pasta with the chopped veggies and crumbled feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper until well combined.
  5. Pour the dressing over the pasta mixture and toss gently until everything is evenly coated. Chill for at least 30 minutes before serving.
