  • 1 cup shredded carrots (about 2 medium carrots)
  • 1 cup cucumber, thinly sliced
  • 1 cup red bell pepper, thinly sliced
  • ½ cup fresh cilantro, chopped
  • 1 cup cooked rice noodles
  • 2 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil

Instructions

  1. 1. Prepare Your Vegetables: Wash and dry all vegetables. Chop the lettuce into bite-sized pieces and shred the carrots.
  2. 2. Cook the Rice Noodles: Boil water in a pot and cook rice noodles according to package instructions until tender but not mushy. Drain well.
  3. 3. Create Your Dressing: In a bowl, whisk together grated ginger, soy sauce, lime juice, honey/maple syrup, and sesame oil until smooth.
  4. 4. Toss Everything Together: In a large bowl, combine lettuce, carrots, cucumber, red bell pepper, rice noodles, and cilantro. Drizzle half of the dressing over the salad.
  5. 5. Serve & Enjoy: Gently toss until coated with dressing. Add more dressing if desired and serve immediately for maximum crunch.
