- 1 cup cooked rice noodles
- 2 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
Instructions
- 1. Prepare Your Vegetables: Wash and dry all vegetables. Chop the lettuce into bite-sized pieces and shred the carrots.
- 2. Cook the Rice Noodles: Boil water in a pot and cook rice noodles according to package instructions until tender but not mushy. Drain well.
- 3. Create Your Dressing: In a bowl, whisk together grated ginger, soy sauce, lime juice, honey/maple syrup, and sesame oil until smooth.
- 4. Toss Everything Together: In a large bowl, combine lettuce, carrots, cucumber, red bell pepper, rice noodles, and cilantro. Drizzle half of the dressing over the salad.
