Ingredients

  • 2 cups fresh cherries (pitted)
  • 1 cup granulated sugar
  • 1 cup freshly squeezed lemon juice (about 4 lemons)
  • 3 cups cold filtered water
  • Mint leaves (optional)

Instructions

  1. Rinse and pit the cherries.
  2. In a saucepan over medium heat, combine pitted cherries, sugar, and 1 cup of water. Stir until the sugar dissolves and the cherries soften, about 10 minutes.
  3. Remove from heat and let cool for 15 minutes.
  4. Squeeze lemons to obtain 1 cup of fresh lemon juice; strain if desired.
  5. In a pitcher, mix cooled cherry syrup with lemon juice and 3 cups of cold water. Stir well.
  6. Serve over ice and garnish with mint leaves if using.
