Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together yogurt, sugar, eggs, oil, lemon juice, vanilla extract, and lemon zest until smooth.
- In another bowl, sift together flour and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
