  • 1 can (15 oz) kidney beans (low-sodium)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp chili powder
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 2 cups beef broth
  • 1 tsp cumin
  • Sour cream and shredded cheese for topping (optional)

Instructions

  1. Prep your ingredients by chopping the bell peppers and onion, and mincing the garlic.
  2. Set the Instant Pot to 'Sauté' mode. Add olive oil and sauté onions and bell peppers for about 5 minutes until softened.
  3. Add ground beef to the pot, cooking until browned (6-8 minutes), breaking it apart with a wooden spoon.
  4. Stir in chili powder, cumin, salt, and pepper; cook for another minute until fragrant.
  5. Add kidney beans, diced tomatoes, and beef broth. Mix well to combine.
  6. Seal the lid on the Instant Pot and set to 'Manual' mode for 15 minutes on high pressure. Allow natural pressure release for 10 minutes before quick-releasing any remaining steam.
  7. Serve hot, topped with sour cream and shredded cheese if desired.
