Description

Grilled Mango Pineapple Chicken is a tropical delight featuring juicy chicken marinated in sweet mango and tangy pineapple, perfect for summer barbecues or family dinners.


Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 ripe mango, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 3 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix soy sauce, lime juice, garlic, honey, and olive oil to create the marinade.
  2. Add chicken breasts to a resealable bag or bowl and pour the marinade over. Marinate in the fridge for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F) and lightly oil the grates.
  4. Grill chicken for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F.
  5. Add mango and pineapple chunks to the grill in the last few minutes until caramelized.
  6. Serve hot with extra lime wedges for garnish.
