- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1 ripe mango, diced
- 1 cup pineapple chunks (fresh or canned)
- 3 garlic cloves, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 2 tbsp honey
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, lime juice, garlic, honey, and olive oil to create the marinade.
- Add chicken breasts to a resealable bag or bowl and pour the marinade over. Marinate in the fridge for at least 30 minutes.
- Preheat grill to medium-high heat (375°F) and lightly oil the grates.
- Grill chicken for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F.
- Add mango and pineapple chunks to the grill in the last few minutes until caramelized.
- Serve hot with extra lime wedges for garnish.
