Description

Zupas Wisconsin Cauliflower Soup is a creamy, comforting dish that feels like a warm hug on a chilly day. This velvety soup combines fresh cauliflower, sharp cheddar cheese, and aromatic garlic for a delightful blend of flavors. Perfect for cozy evenings or as a quick pick-me-up, each spoonful brings joy and satisfaction.

Ingredients

Scale
  • 1 medium head cauliflower (about 2 cups)
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Chop the cauliflower into florets, dice the onion, and mince the garlic.
  2. Heat olive oil in a large pot over medium heat. Add the onions and sauté until translucent (about 5 minutes).
  3. Stir in the cauliflower and minced garlic; sauté until cauliflower is golden (about 8 minutes).
  4. Pour in vegetable broth to cover the vegetables completely; bring to a gentle boil then reduce to simmer.
  5. Once the cauliflower is tender (about 15 minutes), remove from heat and blend until smooth using an immersion blender.
  6. Return to low heat; stir in heavy cream and shredded cheddar cheese until melted.
