- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh parsley, chopped
- 1/2 tsp garlic powder
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Slice zucchinis into thin strips (about 1/8 inch thick).
- In a bowl, mix cream cheese, Parmesan, herbs, garlic powder, salt, and pepper until smooth.
- Place a tablespoon of filling at one end of each zucchini strip and roll tightly; secure with a toothpick if needed.
- Arrange rolls seam-side down on a greased baking sheet. Drizzle with olive oil and sprinkle additional Parmesan on top.
- Bake for 20–25 minutes until golden brown and bubbly. Serve warm.
