  • 2 medium zucchinis
  • 4 oz cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp garlic powder
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Slice zucchinis into thin strips (about 1/8 inch thick).
  2. In a bowl, mix cream cheese, Parmesan, herbs, garlic powder, salt, and pepper until smooth.
  3. Place a tablespoon of filling at one end of each zucchini strip and roll tightly; secure with a toothpick if needed.
  4. Arrange rolls seam-side down on a greased baking sheet. Drizzle with olive oil and sprinkle additional Parmesan on top.
  5. Bake for 20–25 minutes until golden brown and bubbly. Serve warm.
