  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 stalks fresh lemongrass, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 inches fresh ginger, grated
  • 2 tbsp fish sauce
  • 2 red chili peppers, sliced (adjust to taste)
  • 1 cup fresh basil leaves
  • Juice of 2 limes
  • 1 cup mixed vegetables (bell peppers & mushrooms)

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In a large pot over medium heat, sauté minced garlic, ginger, and chopped lemongrass in oil until fragrant (about 1-2 minutes).
  3. Add chicken broth and fish sauce; bring to a gentle boil.
  4. Add seasoned chicken pieces; cook until tender (10-12 minutes).
  5. Stir in coconut milk and mixed vegetables; simmer for another 5-7 minutes until veggies are tender.
  6. Just before serving, add fresh basil leaves and squeeze lime juice into the pot.
