- 2 tablespoons white or red miso paste
- 4 cups vegetable broth
- 1 cup bok choy, chopped
- 1 cup mushrooms, sliced
- 2 green onions, chopped
- 1 tablespoon sesame oil
- 2 tablespoons low-sodium soy sauce
- 2 soft-boiled eggs
- Chili oil (to taste)
- Nori sheets (for garnish)
Instructions
- Cook the ramen noodles according to package instructions until al dente. Drain and rinse under cold water.
- In a large pot, heat vegetable broth over medium heat. Gradually whisk in tahini and miso paste until fully combined.
- Add bok choy and mushrooms to the simmering broth. Cook for about 3-5 minutes, until tender but still crisp.
- Return the cooked ramen noodles to the pot and stir in soy sauce and sesame oil. Heat through for an additional 2 minutes.
- Serve hot in bowls topped with soft-boiled eggs, a drizzle of chili oil, and nori strips.
