  • 2 cups penne pasta
  • 1 packet taco seasoning (about 2 tablespoons)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded sharp cheddar cheese
  • ½ cup sour cream (for topping)
  • ¼ cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning per package instructions.
  3. Add the cooked penne pasta, diced tomatoes, and black beans to the skillet. Mix well until combined.
  4. Transfer half of the mixture to a greased baking dish. Sprinkle half of the cheddar cheese over it, then layer the remaining mixture on top.
  5. Top with the remaining cheddar cheese and bake uncovered for 25-30 minutes until bubbly and golden brown.
  6. Let cool slightly before garnishing with sour cream and chopped green onions. Serve hot.
