- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups shredded sharp cheddar cheese
- ½ cup sour cream (for topping)
- ¼ cup chopped green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning per package instructions.
- Add the cooked penne pasta, diced tomatoes, and black beans to the skillet. Mix well until combined.
