- 4 medium Russet potatoes (about 600g), peeled and cubed
- 1 cup shredded cheddar cheese (about 100g)
- 1/4 cup chopped green onions (about 25g)
- 1/2 cup plain breadcrumbs (about 50g)
- 1 large egg
- Salt and pepper to taste
- Oil for frying
Instructions
- Boil the cubed potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
- Mash the potatoes until smooth, then mix in the cheese, salt, pepper, and egg until well combined.
- Fold in the chopped green onions. Form the mixture into patties about 1 inch thick and coat each side lightly with breadcrumbs.
- Heat oil in a nonstick pan over medium heat. Fry each cake for 3-4 minutes per side until golden brown.
- Drain on paper towels and serve warm with sour cream or your favorite dipping sauce.
