  • 1/2 cup fresh strawberries (chopped)
  • 1/4 cup sour cream
  • 1/2 tsp baking powder
  • 1/4 cup powdered sugar
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  3. Gradually add flour, baking powder, and salt; mix until just combined. Scoop two tablespoons of dough into each muffin cavity, pressing down gently to form cups.
  4. Bake for 10-12 minutes until golden around the edges. Let cool.
  5. For the filling, beat cream cheese until smooth; add sour cream, powdered sugar, and vanilla extract.
  6. In a saucepan over medium heat, cook chopped strawberries with a bit of sugar for about 5 minutes until softened.
  7. Fill cooled cookie cups with cheesecake filling and swirl in cooked strawberries. Chill for at least 30 minutes before serving.
