  • 1 lb flank or sirloin steak
  • 8 oz queso cheese (Velveeta or Monterey Jack)
  • 1 cup long grain rice
  • 1 cup beef broth
  • 1 cup bell peppers (diced, mixed colors)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Marinate the steak for at least 30 minutes. Sear in a hot skillet with oil until browned on both sides (about 4-5 minutes per side). Remove and let rest.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent.
  3. Add long grain rice and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until rice is tender.
  4. Stir in diced bell peppers, cumin, paprika, chili powder, salt, and pepper. Mix well.
  5. Cube queso cheese and stir into the mixture until melted and gooey.
  6. Slice rested steak against the grain into thin strips and fold into the cheesy rice mixture before serving.
